Arctic Charr Linguine in a White Dill Sauce

Ingredients:

  • 2 tsp. butter
  • ½ red onion, sliced
  • 1 tsp. minced garlic
  • ½ cup oyster mushrooms
  • ¼ cup white wine
  • 2 cups 35% whipping cream
  • 1- 4 oz. Package of Northern Spirit™ Retort Smoked Arctic Charr
  • 1 handful baby spinach
  • ¼ cup chopped fresh dill
  • 1 tsp. Dijon mustard
  • salt & pepper to taste
  • ¼ cup fresh parmesean cheese

Cooking Instructions:

  1. Over medium heat, sauté butter, mushrooms, red onion, garlic, fresh salt and fresh ground black pepper for 2-3 minutes.
  2. Add white wine and simmer for 1 minute.
  3. Add whipping cream, simmer until desired thickness.
  4. Drain Smoked Arctic Charr and add to sauce.
  5. Just before serving, finish with spinach, dill, mustard and cheese.
  6. Toss with fresh cooked linguine (or pasta of choice).

 

Northern Spirit™ Smoked Arctic Charr Spread

Ingredients:

  • 1 – 4 oz. Package of Northern Spirit™ Retort Smoked Arctic Charr
  • 1 lb. cream cheese
  • ¼ cup capers
  • ¼ cup lemon juice

Cooking Instructions:

  1. Bring cream cheese to room temperature.
  2. In a large mixing bowl, combine Arctic Charr, cream cheese, capers and lemon juice to create the spread.
  3. Serve with crackers.
